The Pumpkin-Plumper: Fall’s Super Anti-Aging Smoothie

It’s fall! Isn’t it? Despite the wild heat wave this week, it is in fact officially October and that means glorious pumpkin season has arrived! From pies, breads, and baked goods to soups, spreads, starters, and maybe the most appropriate pumpkin use at the moment…the pumpkin smoothie ::

My Pumpkin-Plumper Super Smoothie is loaded with the vitamins and minerals that target signs of aging in the face and skin. The Pumpkin Plumper fights wrinkles and fine lines through hydration and an infusion of Vitamin A, B Complex, C. This smoothie is nothing short of a seasonal superstorm of nutrition and flavor.

I also enjoy this smoothie for its immune boost properties: as October rolls around we all become increasingly susceptible to infections and colds and of course the dreaded flu. The spices, vitamins, and minerals packed in this recipe will re-energize and rev up system from the first moments in the morning and continue to help to you fight all that the changing weather brings with it. On a brisk morning, I particularly like substituting the coconut water for 1/4 of Nespresso or strong black coffee, throw it in my to-go and head out. It’s a heck of a lot better than grabbing that Starbucks pumpkin spice latte.

Pumpkin-Plumping Anti-Aging Smoothie

Loaded with Potassium, Beta Carotene, Vitamin A & C, and
Zinc to name a few!
Makes 2 standard smoothie servings

Ingredients
1 ½ cups organic pumpkin puree
1 cup almond milk (unsweetened)
¼ cup coconut water
1 cup organic frozen mango or peaches (Vitamin A)
1 heaping tsp Pumpkin Pie Spice
*salt free all natural blend if you can find it is best, the blend contains ginger, cinnamon, nutmeg, & cloves all essential to fighting the flu aiding digestion
1 tsp agave syrup, maple syrup, active Manuka honey, or 4 drops Stevia
2 chopped kale leaves, stems removed (Vitamin C)
1 tsp pumpkin seed oil * (excellent for skin, internal moisturizer loaded with Zinc)
1 tsp ground flax seeds (Omega 3- fatty acids: reduce lines & wrinkles)

Boost it!
1 tsp Vitamin C powder (anti aging skin, immune boost) | 1 natural dairy-free probiotic capsule, break to use interior powder only (aid digestion) | 25 drops Echinacea, to fight colds, & immune boost |
a few slices of ripe Banana to add even more potassium for very active exercisers… or get creative!

Method
1. Place all ingredients in the bowl of a high-power blender, and blend till smooth and creamy.
2. ENJOY!

NOTE: If I make this on a frosty fall morning, I often times will switch out the coconut water for expresso or black coffee (often a hazelnut or french roast coffee blends best). It’s an easy way to get your morning caffeine-fix in while you’re running out…
