A Spooky Halloween Sunday evening deserved a sparkling sip and seasonal snack. Here’s what we’ve been savoring over at The Supper Model to close out the weekend in wicked style…

Peach-Pear Sparkling Cider Cocktail
Serves 4 cocktails

2 ripe pears
2 ripe peaches (pit removed)
1/2 an orange and/or lemon, pealed

1 cinnamon stick
1 star anise
2 cloves
1 tsp warmed honey
Brut champagne, proseco, or sparkling wine
dash of Cointreu
Garnish each glass with a quartered slice of fresh peach

1. In a high power juicer, juice pears, peaches, and orange and/or lemon. Crack the cinnamon stick, the star anise and cloves and place them in a mulling tin, a tea infuser, or a piece of cheese cloth, tied up.
2. Add the warmed honey to the juice and stir until it has dissolved. Add the spices and let them infuse the juice for as long as possible (up to an overnight) covered in the fridge.
3. Remove the spices from the juice and pour about two shots worth of juice into a cold martini glass. Add a dash of Cointreau and top with champagne, proseco, or sparkling wine, making sure to add at least a shots worth.
